Last week, I embarked on a culinary journey to celebrate 200 years of the modern railway with Legacy, the crowning jewel of York’s gastronomic scene, located within The Grand York Hotel—a magnificent five-star establishment steeped in railway heritage. The experience was nothing short of remarkable.

The day began at London’s Kings Cross station on 2nd October, departing aboard the LNER First-Class carriage. The legacy of railway opulence was immediately apparent, as the Legacy team provided a warm welcome and thoughtful touches – an elegant prelude to the delights that awaited us. On arriving in the historic city of York—a place steeped in cultural and industrial history—I checked into The Grand, a landmark hotel intrinsically tied to the evolution of Britain’s railways. The enduring charm of The Grand York is matched only by its quiet luxury, creating the perfect setting for our culinary adventure.

The pinnacle of the day was dinner—a specially created tasting menu designed by the talented duo: Executive Head Chef Kevin Bonello and Head Chef Ahmed Abdalla. Crafted to celebrate the railway bicentenary, the menu was a masterclass in storytelling, blending nostalgia with creativity while paying homage to the elegance of dining experiences once found in railway carriages.

The Hash Brown was a revelation—taking the humble comfort food to new heights with the nutty depth of aged Lincolnshire Poacher cheese, the herbal punch of lovage, and the cool creaminess of crème fraîche. It was both familiar and extraordinary, striking a perfect balance between nostalgic simplicity and culinary sophistication.

The Whitby Crab Tart was a tribute to Yorkshire’s coastlines. The sweetness of the carrot, the creamy richness of avocado, and the zesty punch of kalamansi brought out the delicate flavours of the crab in a way that felt fresh, vibrant, and entirely unforgettable.

Then there was the Milk Bread with Marmite Butter & Caerphilly Cheese Whip, which found inspiration in British comfort food staples. The Marmite butter was a stroke of genius, the sharp tang of the yeast spread mellowed into luxurious richness, paired with the creamy decadence of the Welsh cheese—it was a joyful, indulgent treat.

The Orkney Scallop was the evening’s pièce de résistance. Perfectly cooked, it melted in the mouth and was supported by the silkiness of the sake sabayon, a pop of salinity from the sturia caviar, and the earthy depth of fermented turnip. It was a masterclass in balance and technique.

Transitioning to heartier fare, the Spiced Monkfish was a bold and adventurous offering. Thai red curry brought heat, while the coconut-coriander chutney added creamy earthiness, and the grapefruit lent a bright, citrusy lift. It was a global twist on British tradition, executed with precision.

The Homage to ‘Windsor Soup’ reinvented the dining car classic with tender, slow-braised beef brisket surrounded by confit root vegetables and a profoundly savoury beef tea. It was nostalgic and deeply satisfying, evoking the grandeur of Victorian rail travel.

When it came to the Smoked Yorkshire Venison Loin, every element sang. The delicate smokiness of the venison paired with a crisp crumpet, tangy blackberry ketchup, and the richness of the Grand Veneur sauce, all tied together by the textural contrast of pomme paillasson. Finally, the 21st-Century Plum Pudding reimagined the quintessential British dessert with a light dried fruit sponge, silky custard, and a bright candied peel gel. It managed to be nostalgic yet modern, rounding out the meal with ingenuity and charm.
